Method
- Preheat your oven to 350 F and spray a 9 inch pie plate with cooking spray
- In a large bowl, whisk together the Bisquick, oil, eggs, salt, and pepper. Add the mozzarella and Parmesan; stir to combine
- Fold in the zucchini, onion, and garlic
- Pour into the pie plate and bake in the oven until cooked through and golden brown (approximately 40 minutes)
Notes
- With this recipe you don’t need to squeeze the zucchini dry
- Some people just slice the zucchini thin but I strongly recommend grating it for the best possible texture.
- Any good melting cheese will work well in this recipe including Gruyere, Monterey Jack, and Gouda and Cheddar.
