Mashed Rutabaga (Waxed Turnip)

Mashed Rutabaga is a simple side dish that makes an excellent lower-calorie and lower-carbohydrate alternative to mashed potatoes. They're creamy and sweet with a subtle nutty flavor and they might just become your new favorite!

Ingredients
  

  • 1 large rutabaga peeled and chopped
  • 4 tablespoons butter
  • salt to taste

Method
 

  1. Peel the rutabaga and cut into 1 inch chunks
  2. Place the cut rutabaga in a pot of cold salted water. Bring to a boil, then simmer until fork tender (about 20 minutes)
  3. Drain the rutabaga and return to the pot. Add the butter and use a hand mixer to mix well until it reaches a smooth and creamy consistency. Adjust salt as needed
  4. Transfer to a serving dish and garnish with chopped parsley or grated parmesan
