My watermelon feta salad has become a family favorite, and I make it all summer long. I mean, why not? It's quick and easy to throw together. And it's a light and refreshing and option for those all day cookouts out in the hot sun.

Seriously, you can only eat so much pulled pork and smoked sausage before you start getting the meat sweats!

This really is the perfect side dish for BBQs and potlucks. Serve it at your next backyard cookout and watch it disappear!

Ingredients

Everything is fresh and there's no cooking involved. All you need is a good sharp knife for chopping.

  • Watermelon - Make sure the watermelon is ripe. You want it extra sweet and juicy
  • Cucumber - I find the cucumber pairs really well with the watermelon and it adds a little crunch factor too
  • Feta - Get the brick cheese and crumble it yourself. You'll notice the difference
  • Mint - Adds a bright, refreshing flavor and an additional texture
  • Lime Juice - Freshly squeezed juice from a lime adds a zesty tang to the salad
  • Balsamic Glaze - Drizzled lightly right before serving

Storage

This watermelon feta mint salad is best served fresh. You can absolutely cut everything up and get it all prepped ahead of time, but I wouldn't assemble it all until right before serving. As it sits the watermelon will release liquid, and over time the salad will become more watery.

Leftovers can be stored in an airtight container for a day or two, but it will continue to break down and turn mushy as it sits.

Reheating

Just kidding! It's a salad...you don't need to reheat it!

Ingredients
  

  • 4 cups watermelon cubed
  • 1 ½ cups English cucumber sliced
  • ½ cup feta cheese
  • ¼ cup fresh mint leaves chopped
  • 1 tablespoon lime juice
  • balsamic glaze optional

Method
 

  1. In a large bowl, add the watermelon, cucumber, feta, and mint, and lime juice. Stir until ingredients are well combined. If using the balsamic glaze, drizzle lightly right before serving.

Notes

  • You can swap out the balsamic glaze for balsamic vinegar or a balsamic vinaigrette
  • While you can make this salad ahead of time, it's best served fresh
  • Add a little crunch with some sliced red onion or pecans
